Start by cutting the pumpkin in small pieces and set it aside. Then chop the chillies, the coriander leaves and roots, the ginger and garlic and fry those ingredients (expect for the pumpkin) in a pan with oil. Then add the onion, leek and pumpkin and fry for few minutes. After those ingredients are well fried add the chicken stock and season with salt, black pepper and chili powder. Add the coconut cream last and simmer for 20-30 minutes. Puree the soup with and add some lime juice. At the end garnish with coriander leaves and serve hot.

Whole baked pumpkin

An idea of how to use a whole pumpkin for a tasty meal. The necessary ingredients prep 4 portions are:

  • 1 medium-sized pumpkin,
  • 250 g mincemeat,
  • 1 bulb of onion,
  • 1 bulb of garlic,
  • 1 table-spoon of tomato purée,
  • 2 table spoons of water,
  • 5 tea spoons of ground cumin,
  • 5 table spoons of dill,
  • 50 g of Parmesan cheese and some olive oil.

First you start by washing the pumpkin and cutting off the top. Then scrap out the pumpkin seeds and the pulp and lubricate the inside and the edges with olive oil. Preheat the oven and place the pumpkin on 400 degrees for about 20 minutes. In the meantime slice the onion and garlic and mix them with the mincemeat. Then mix the tomato purée with the water and add it to the mincemeat. Add some cumin and dill according to taste. After the baking time is over, take the pumpkin out of the over and scrap out the soft pulp. Add the scrapped pulp to the mincemeat and fill that mixture into the pumpkin. Spread the Parmesan cheese on top and place the lid of the pumpkin. Put it back in the oven at the same temperature and after 10 minutes the dish is ready to be served.

 Baked Pumpkin with Caramelized onions

  An interesting and simple recipe for pumpkin with caramelized onions. The necessary ingredients per 4 portions are:

  • 1 kg pumpkin,
  • 120 ml water,
  • 60 ml vegetable oil,
  • 4 medium onions,
  • 50 g of sugar,
  • 2 tea spoons of cinnamon,
  • salt and pepper.

Start with cutting the pumpkin on medium-sized chunks and chop the onions. Preheat the oven to 350 degrees. Then place the pumpkin chunks in an oven proof dish and add the water. Cover the dish and bake for 40-45 minutes. After that take it out, let it cool and set it aside. In a large skillet heat the oil and the onions until they become tender (5 to 6 minutes). Then add the sugar, cinnamon and the salt and pepper to taste. Stir until the onions are caramelized (15-20 minutes). After that spread the onion mixture evenly over the pumpkin and return to the oven and bake for about 10 minutes.

Pumpkin Risotto

  A very easy and delicious recipe for risotto with pumpkin. The necessary ingredients per 4 portions are:

  • 1 l of vegetable broth,
  • 100 g of Parmesan cheese,
  • 400 g of pumpkin,
  • 100 g of butter,
  • 400 g of rice,
  • 1 medium-sized onion,
  • 200 ml of dry white wine,
  • olive oil, salt and pepper.

Begin by putting the vegetable broth into a sauce pot or a brazier pan and bring it to boil. Then add the pieces of pumpkin and cook for about 10 minutes. Then puree the pumpkin with little broth and leave the rest of it for later. Add 50 g of butter and some olive oil to a wide pot and heat it up. Finely chop the onion and put it in the pot. Let it cook a little, before you add the rice and stir with a wooden spoon until the rice turns slightly glassy. After that add the wine and let the rice absorb it fully, while keep stirring. After the wine has been absorbed add 1/3 of the vegetable broth and keep stirring. Keep adding more broth as soon as the rice has absorbed it. After all the broth had been absorbed, add the pureed pumpkin and keep on stirring, until the rice is cooked. Before serving add the rest of the butter and some of the Parmesan cheese. The rest of the cheese serves on the table to be sprinkled on top.
